Three Meat Cowboy Breakfast Hash 4 Slices thick cut bacon, chopped 1 cup diced ham 1 poblano pepper, diced 4 ounces chorizo ½ diced yellow onion 1 garlic clove, minced ¼ - 1/3 cup canola oil or fy oil 3 medium red potatoes, chopped 1 tablespoon butter 2 - 4 eggs Chopped green onion and/or shredded cheese for serving (optional) -In a medium cast iron skillet, begin browning the bacon. As it browns, stir in the ham. When the ham begins to brown stir in the Poblano and cook for about 2 minutes, stirring occasionally. Set aside. - In a large cast iron skillet, add the chorizo and cook over medium-high heat. As the meat begins to brown, stir in the onion and garlic. Continue cooking until the meat as browned and onions are tender, stirring occasionally. -Add the chorizo mixture to the bacon skillet. Return to the empty skillet and add the fry oil. Heat over medium-high heat. Stir in the potatoes and cook until golden brown and tender, stirring occasionally. Drain any excess grease, if needed. -Add the meat mixture to the larger potato skillet. How to make PERFECT Hash Brown Potatoes Every Time!

Today we are making something with potatoes. I have taken a cooking class in Ecuador. It is all about Ecuadorian style potato recipes. During the class, I felt like I had enough potatoes for at least a month but there is 1 potato dish that I will never get sick of it. I can eat it every single day. That will be hash brown. Making hash brown is very easy and I will share few tricks to ensure make the perfect hash brown every time. Ingredient List - 2.5 pounds of soft kind potato - 1.5 tsp of salt - Black pepper to taste - oil to pan-fry - First, you need to pick the softest potato you can find. Peel the skin and shred it. Make sure use the biggest hole in your shredder. - Wash the potato in cold water to get rid of the excess starch - Squeeze the potato with cheesecloth. Make sure you get the last drop of water out. - Add some salt to taste. I used 1.5 tsp. Let it sit for 5 minutes. - 5 minutes later, squeeze the potato again. This is my ultimate trick. Squeeze the potato twice - Once before the salt, once after the seasoning. This is going to help you get more moisture out of it which is going to make sure you get a nice crispy hash brown. That liquid is what makes your hash brown wet and soggy. - After the second squeeze, if you want to be fancy, you can add shallot, herbs or anything you like. I am just going to keep my hash brown simple so I will add some black pepper. Mix it until the black pepper is well combined. Now we can start cooking it. - Get your biggest frying pan possible. I like to cook my hash brown in one big batch. Add some oil, enough to cover the bottom of the pan. Wait until the pan gets hot. Then put your potatoes in. You should be able to hear the nice sizzling. Use a spoon to tightly pack it down and shape it nicely. Them cover the lid and let it cook for 12 minutes on medium-low heat. The reason you put the lid on is that the top get cooked faster. 12 minutes later, you see the side of it is slightly golden. That means you can flip it over. Cook the other side for 12 minutes as well. Use the spoon to pack it tight. This time, do not put the lid on or else you will ruin the crunchiness. 12 minutes later, give it a little peek to check the color. And you are done. Enjoy your meal! Drain and set aside. In a large frying pan, sauté onion and sausage until cooked through. Using a slotted spoon, remove sausage and onion from the pan and set it aside. In the same pan, cook green apple and potatoes, stirring frequently, until they become golden; 8-10 minutes. In a small bowl whisk ketchup with apple cider vinegar and thyme leaves. This video is something I've been wanting to make a video on for over a year. My late dad use to make this during Christmas when me and the brothers would pit cook a whole hog. We would eat this hash on rice which could make a meal in itself. Has is pretty much a South Carolina thing, but can be found in small pockets elsewhere. If you ask for rice and has away from the PeeDee area of SC, the waitress looks at you like you are crazy. lol There are many different versions of has, straight liver has being one of them. This has is only ground up Boston butt, onions, then adding lots of sauces with salt & pepper. It is something which more people should know about and try. It is delicious, especially with BBQ. This recipe makes 16 quarts, takes about 5-6 hours of your time to make which includes some wait time on the pressure cooker heating up and cooling down. It's not hard to do, just takes some time. I hope you try it. Unpack butts and wash off then pat dry. With butcher or chef's knife cut up both butts in 2 inch cubes. (If you don't have a large pressure cooker, fill a large 16 Quart cook pot half full of water). In a 16 quart pressure cooker or large stock pot, add water an 2 Tb black pepper & 3 tsp kosher salt. This is separate from salt & pepper below added later with other ingredients. Pressue cook at 20 lbs pressure fo 25 minutes. Boil Butts until done, remove and let cool Grind up in food processor. Add 1 cup cooker broth to each grind to help meat work down into the cutter blades. Grind Onions and meat down to a fine mush. Mix meat and other ingredients in large stockpot **IMPORTANT** ONLY USE LOW TO WARM UP, THEN SIMMER Simmer on low simmer heat for 2 hours. Careful not to burn or scorch. Stir frequently. Serve on rice. Freeze rest in quart bags.

Steak and eggs hash with baby potatoes is a delicious breakfast recipe that you can put together in a single cast iron skillet! Join Eric from Simply Elegant Home Cooking as he demonstrates his method for this delicious dish! As stated, this is a method, more so than a recipe, as you can customize the ingredients to your taste with any combination of vegetables and spices that you like. Ingredients: -NY strip steak (Ribeye works equally well) -Baby gold potatoes -Sweet onion -Red bell pepper -Italian parsley -Salt and pepper -Butter -Olive oil (or other neutral oil) -Free range organic eggs -Cayenne pepper -Paprika -Garlic powder -Sugar Directions: -Set out the steak an hour before you plan to cook so it comes up to room temperature. When cooking time approaches, blot dry with a paper towel and season all sides generously with salt and pepper. -Heat up a cast iron skillet over medium-high heat until lightly smoking. Once skillet comes up to temperature, add in the steak and sear each side for about 3 minutes or until cooked to your desired doneness. -While the steak cooks, chop up the baby potatoes into a medium dice. -Once steak is cooked, remove it from the pan and in the same skillet, add in the potatoes and about a tablespoon of butter. Cook the potatoes, flipping every 2-3 minutes for a total of about 10-12 minutes total or until browned and crispy on their exterior. Add salt and pepper, as well as any other desired spices throughout the cooking. -When potatoes are cooked, remove them from the skillet, add in more butter, and add in the sliced onions and red bell peppers. Cook on medium heat, adding salt and pepper to taste along with a very small amount of sugar to help them caramelize. -Once onions and peppers have caramelized, add back in the potatoes and cook for a few minutes, allowing the flavors to meld. -During the last few minutes of cooking, fry 2 eggs. -Slice up the steak, removing the fat cap, and add the sliced steak back into the skillet, along with a large handful of chopped Italian parsley. -Serve up the steak and eggs hash and enjoy!

Here is what you'll need! Ingredients: 2 Tbsp. butter 1/2 yellow onion, thinly sliced 1/2 red pepper, sliced into strips 2 cups spinach 1 1/2 cups frozen hash browns 1/2 cup shredded cheddar cheese salt and pepper to taste chipotle sour cream (optional - for garnish) chopped scallions (optional - for garnish) Directions: Take your hash browns out of the freezer to allow them to begin to thaw. In an 8 inch nonstick pan, melt 1 Tbsp. of butter on medium heat and add onions, occasionally stirring. Allow to cook until they have softened and begin to brown. Add the peppers, stir, and salt to taste. Cook until they begin to soften. Add the spinach and allow it to wilt for a couple of minutes. Transfer this filling to a bowl. Put your pan back on the heat and add 1 Tbsp. of butter, melting on medium heat. Add your hash browns and season with salt and pepper to taste, stirring until the butter and seasoning are evenly distributed. Arrange the potatoes in a flat even layer. Sprinkle cheese evenly on top and allow it to melt. Then, sprinkle the filling evenly on top. When the bottom of the hash browns has crisped up and browned, your hash brown omelette is ready. Shake the pan to make sure it’s not sticking to the bottom, then bring it over to your plate and carefully tilt the pan, using the edge to help fold it over in half. Add your favorite toppings and enjoy! (We used chopped scallions and a chipotle sour cream.) For the chipotle sour cream: Combine 1/2 cup sour cream or crema, 1 Tbsp. chipotle in adobo (finely chopped), a pinch of salt, and a splash of water to thin it out. Ten generous servings: 1lb ground turkey 1/2 cup chopped green bell pepper 1/2 cup chopped red bell pepper 1/2 cup chopped yellow or white onion 1/2 cup canned black beans ( I used a whole can), drained and rinsed 1 can (10 oz) mild red enchilada sauce 4 oz fat free cream cheese, softened 1 package (1 oz) taco seasoning mix 8 eggs 3 tablespoons milk Salt and pepper to taste 2 cups shredded fat free cheddar cheese 1 bag (1lb) frozen shredded hash brown potatoes, thawed Chopped fresh cilantro, if desired Heat oven to 350 degrees F. Spray 13X9 inch ( 3 quart) baking dish or casserole dish with cooking spray. Heat 10-inch heavy bottomed skillet over medium-high heat. Add turkey, 1/4 cup of green bell pepper, 1/4 cup red bell pepper, and 1/4 cup of the onion. Cook about 10 minutes, stirring frequently and breaking up turkey with wooden spoon, until turkey is done and vegetables softened. Reduce heat to medium- low. Stir in black beans, enchilada sauce, cream cheese and taco seasoning mix until well combined. Cook about 2 minutes or until warmed through. Transfer mixture to baking dish. Wipe out skillet, and return to stovetop over medium-low heat. Spray pan with cooking spray. In large bowl, beat eggs milk, salt and pepper with a wisk. Pour into skillet and cook 5 to 7 minutes stirring occasionally, until eggs are a soft scramble. Remove from heat; stir in 1 cup of the shredded cheese. Spread evenly over top of mixture in baking dish. In large bowl, mix remaining 1/4 cup green bell pepper, 1/4 cup red bell pepper and 1/4 cup onion, 1 cup shredded cheese and the hash brown potatoes. Spread evenly over eggs in baking dish. Bake 30 to 35 minutes ( I baked for 40 minutes) or until bubbly and baked through and potatoes or top are golden brown If not brown enough on top you can put it under the broiler for a minute or two. Sprinkle with chopped fresh cilantro. Enjoy!

In a bowl mix together the shredded potatoes, cream, salt and pepper. Next, season the top part of the salmon with salt and pepper, and then evenly spread on the grainy mustard. 2. Next, place down the shredded potato mixture onto the salmon and push the potato down on the salmon to make sure it stays. 3. In a large sauté or frying pan over medium to medium-high heat with 3 tablespoons of olive oil place in the salmon potato side down to form a crust. After 4 to 6 minutes, or until a dark brown crust has formed onto the potatoes, flip the salmon over and finish in the oven on 350° for 8 to 10 minutes. Once finished remove from the pan and serve. 4. While the salmon is cooking in the oven heat up 1 tablespoon of olive oil in a large saute or frying pan over medium to medium-high heat and caramelize the onion and garlic. Ingredients 3 Cups Hash Brown Potatoes 1/2 Cup Parmesan Cheese 1/4 TSP Kosher salt 1/8 TSP Black Pepper 6 eggs at room temperature 1/4 TSP of salt Recipe 1. Pre heat oven to 350 degrees 2. Put three cups of hash brown potatoes into a bowl. Make sure the hash browns are thawed and drained. 3. Add cheese, salt and pepper to potatoes and mix well. 4. Using a muffin tin, spray with non stick cooking spray. 5. Put in hash brown mixture and form into cups in the muffin tins. 6. Bake for one hour at 350 degrees. 7. Put eggs into hash brown cups. 8. Sprinkle with 1/4 tsp of salt 9. Bake for 12 minutes at 350 degrees 10. Garnish with thyme 11. Serve and enjoy!

While the hash brown mix is baking, fry up the bacon rashers and cut them into small cubes. Sprinkle the rest of the cheese on the baked hash browns. Form a circle along the edge of the hash browns using the bacon cubes before making two lines that cross each other at the center of the hash browns. Break an egg into each quarter of the hash browns. Then bake the dish for another 15 minutes at 400 °F.

The yolks spill down over the veggies, adding protein and deliciousness.  Vegetable Hash Recipe in a Cast Iron Skillet Ingredients 12 ounces bacon, chopped 5 eggs 2 large sweet potatoes, peeled and chopped 2 teaspoons cumin 8 ounces mushrooms, sliced 1 medium red onion, diced 3 cloves garlic, peeled and minced 2 cups fresh greens, like spinach or arugula 4 ounces feta cheese 1/2 cup cherry tomatoes, diced 1 ripe avocado, diced 1/4 cup fresh parsley, chopped Salt to taste Vegetable Hash Recipe in a Cast Iron Skillet Instructions Cook the bacon in a cast iron skillet over medium heat, until crispy. Remove and set aside. Fry the eggs in the bacon grease. (You may remove a bit if the bacon you have is extra greasy.) Cook the eggs over easy, or to to your preference. (We like to leave the yolk runny, because it tastes delicious when it runs down over the vegetables.) Sprinkle the eggs with salt and set aside. We just shut down the brunch game. DIRECTIONS 1. Add potatoes to a medium saucepan and cover with water. Bring to boil and simmer until just tender, about 10-15 minutes. 2. Heat oil in a large skillet over medium-high heat. Season steak all over with salt and pepper. Add to the skillet and cook until reach desired doneness, about 4-6 minutes per side for medium-rare. Remove steak from the skillet to let it rest. 3. Meanwhile, add onion and bell peppers to the skillet and cook over medium heat until beginning to soften, about 5 minutes. Add potatoes and paprika, then season with salt and pepper to taste. Cook until the potatoes become even more tender and start to crisp up. Chop steak into 1” cubes and stir the meat into the potatoes. 4. Using a wooden spoon, make four holes in the hash to reveal bottom of skillet. Crack an egg into each hole and season each egg with salt and pepper. Cover the skillet with a lid and cook until eggs are cooked to your liking, about 5 minutes for a just runny egg. Serve warm. Learn how to make Poached Eggs With Hash Browns at home, that makes a filling and delectable breakfast. Preparing good and tasty breakfast is one question that crosses our mind every morning. So to bring a variety to our regular breakfast, Chef Shantanu Gupte brings you a delectable breakfast recipe. Ingredients: Poached eggs with hash browns 1 pot water (for poaching) 2 eggs brown bread tomato 1 lemon par boiled potatoes ( 4- 5) grated. Salt to taste pepper to taste butter 3 tbsp Method: To make the hash browns: - Heat the deep pan on a low flame. - Squeeze in the lemon juice. - Grate the par boiled potatoes on a dish and spread it. - Add salt and pepper to the potatoes and lightly run a fork through it. - Add a dollop of butter to the pan and let it melt. - Once it melts slightly, add the butter to the grated potatoes. - Drizzle oil on the chopping board and spread it. - Place a spherical mould or ring on the board and add the grated potato into the ring. Press it lightly using a spoon and then take off the mould. - Heat butter in the pan and add the potato hash. - Add oil to the pan and let the potatoes cook on a low heat. - Flip the potatoes once they turn crisp and brown. - The hash browns are ready to be plated. To make the poached eggs: - Once the bubbles start forming in the water, add salt to it. - Add the egg and let them poach for about 3-4 minutes. - Take a brown bread and cut out a piece using the same mould. - Add it to the pan and let it crisp up. - Once the egg starts coming to the surface of the water, take it out. - Add salt and pepper to the eggs. - Plate them on the crisped up bread. - Serve with the hash browns and roasted tomato. Hi Guys, today I'll show you how to make crispy hash browns really easily. You'll need potatoes, salt and oil - that's it! Use Russet potatoes as they are the best variety for this recipe. Peel them and grate on a box grater using the largest holes. Heat up a large pan with a few teaspoons of vegetable oil. Spread the potatoes in a single layer and use a spatula to press them down gently. Sprinkle salt and pepper on top of the potatoes. Cook for a few minutes on one side until golden brown. Turn the potatoes over and cook on the other side until golden brown. Transfer to a plate and serve with ketchup.
